Banana & Dark Chocolate Chunk Muffins // Gluten & Dairy Free // Vegan

It wouldn't be right if my first blog post of the New Year wasn't baking themed right? Again I've been a little absent - I've been concentrating on myself, there's been a lot of appointments, plans made and steps to take. I'm determined to make 2018 the year I better myself and make not only myself proud, but my supportive family prouder. Whether I'm crafting out a new Career Path OR perhaps I will get that Business plan going. I also spent the start of 2018 fighting the most horrendous bout of Flu, getting struck down on New Years Eve of all nights. I didn't touch a single drop of alcohol, stayed in with the parents - just managing a round of Monopoly before falling asleep early.  I didn't get round to sharing my Christmas Gifts or Lush Dupes - deciding mid January was probably far too late to be using festive backdrops...even if you're an elf like myself.

SO, Here we are hitting Mid-February with a fresh start and a more regular schedule to decide on (hopefully). I've been meaning to share my current favourites to bake for a couple weeks now - sorry girls who I promised the recipe to, I hope you understand. 2018's first blog post is my fantastic (if I do say so myself) Banana and Dark Chocolate Chunk Muffins that are completely Dairy & Gluten Free - and can easily be made Vegan - I've tried them with and without egg, both fantastic and will be shared further below. The original recipe came from Little Sweet Baker - a beautiful baking blog I discovered on my many Instagram Stalks. I simply switched up a few ingredients to make it fit into my dietary requirements and lifestyle.

With two spotty bananas hanging around, it was the perfect time to get cracking with my new recipe find. There's nothing better than a banana themed baked - I can't say no to a fresh slice of warm banana bread, a two ingredient banana pancake, cookies (you can find my Peanut Butter and Banana Free From Cookies here, an updated version coming soon) OR these Incredible, Incredible Banana Muffins right here. I'd made the PB and Banana Cookies the previous Monday, there's been a definite theme lately with Bananas - heck they make you feel a little better for making so many sweet treats right & the ultimate comfort food.

Stuck on whether to make Em Talks' 3 Ingredient Banana Bread or the Muffins, the muffins won without a doubt and boy am I glad they did. It's been such a gem to find and so easy to tailor to my dietary requirements and readily available ingredients. Whilst this recipe feels totally naughty - it's the perfect treat for the after Christmas indulge, not to mention the up-coming week of Pancake Day, Ash Wednesday, Valentines and Chinese New Year. I'm now forever wishing for more spotty bananas to make batch after batch of these bad boys.

These Muffins are absolutely incredible - my food vocabulary seriously needs to expand right now doesn't it? But seriously - whether you eat them warm from the oven (okay, not straight - I don't want to be responsible for burnt lips) OR completely cool, not to mention zap each one in the Microwave for 20-30 seconds, you'll be trying SO hard not to eat the entire batch yourself. I don't always eat a lot of my baking (I love for everyone else to enjoy it) BUT I'm pretty sure I could eat all 12 myself - especially when you pair them with some Swedish Glace Dairy Free Ice-cream or more Alpro Go On Yogurt. They're a great grab and go breakfast, perfect coffee accompaniment or like above, a great pudding/dessert.

So without further ado, here's how to make the best damn Banana Muffins you'll ever set your taste buds on, that have been loved by every single person to get their hands on them whether they're Free From themselves or not. Girls here's the recipe you've been long over-due if you've got a few more bananas lying around. If not get out there, buying them in prep! 

Ingredients - 
220g Plain Gluten Free Flour (I use Dove Farm)
100g Caster Sugar
1 tsp Ground Cinnamon
1/2 tsp Salt
240g Over-Ripe Mashed Banana, about two Banana's - Mine weighed a little over this
125ml Rapeseed Oil
2 Large Free Range Eggs - OR Egg Replacer (I use - Orgran No Egg, Egg Replacer)
60g Plain Alpro Go On Yogurt
1 tsp Vanilla Extract
100g Dark Dairy Free Chocolate - roughly chopped/broken

Method - 
- Pre-heat Oven to 175C (fan) and line a 12 hole muffin tin with cases.

- Weigh, Sieve and Mix all your dry ingredients into a large bowl, before adding in your dark chocolate chunks. Feel free to use whatever chocolate you prefer - if you prefer something lighter, milk or white would work just as well - not to mention chocolate chips - however to get that true melted chocolate centre I'd recommend roughly, chopped chunks of chocolate.

- In a seperate bowl whisk all your wet ingredients until combined, this will include the egg replacer if using one (which I'd recommend mixing in a small bowl, before adding to the wet ingredients).

- Now, time to bring the wet ingredients to the dry and mix until JUST combined - you don't want to over mix muffins otherwise the texture won't be as enjoyable. 

- Fill your muffin cases equally, before placing in that pre-heated oven of 175C Fan. Bake until the muffins have risen well, golden and your tester comes out clean (18-20 minutes). Allow to cool slightly before devouring one or two....if you can stop yourself at that. Leave to cool completely before packing away in an air tight container - these muffins keep for a good 4-5 days - not that they'll be around for that long. Our 12 were soon whittled down to just 4 in less than 24 hours.

You seriously won't regret making these muffins, they'll soon become a classic in your household. I mean look at that delightful molten chocolate, whether fresh from the oven or zapped for 30 seconds in the microwave. The only way you should eat them in my opinion - but equally YUM whether cool or warm. They're pure perfection on a stormy afternoon, just like today. FACT - My Dad immediately requested two packaged up for his night shift - off he went with warm Banana & Dark Chocolate Muffins for himself and his work colleague. What a way to start a long 12 hour shift - needless to say I'm always the talk of the work place. For this weeks bake however - I made him a lemon drizzle cake to take in, to keep these guys for our household. Now I'll give you two guesses on what I'm about to do......yeah, those two other Bananas are getting made use of. - Lots of Love, Lucy xx - maybe, I'll let him take one or two in this time ;)
