Lemon Drizzle Flapjack Recipe // Gluten and Dairy Free

If you're anything like myself, you'll agree there's nothing better than a slice of homemade Lemon Drizzle Sponge accompanying your afternoon cup of tea, though sometimes there's just never enough time in the day to whip one up and shop bought doesn't even bare to come close. Today's recipe combines another of my loves - perfectly golden, soft buttery flapjack with the zingy, crunch topped sponges flavour, myself and entire family adore.

Whilst looking for a quick bake for my Dad to take in on his last ever night shift before his work shift/days change, I came across Helen's Recipe & couldn't resist - even when I was already sending him off with a few other home-made delights. Out of all the treats the boys had to enjoy that night, this was the most loved and raved about, not to mention my Mum now requesting a couple batches for her own office despite them all being on 'diets after she'd devoured a slice yesterday morning for breakfast teamed with a bowl of fresh blueberries, strawberries, cherries and fat free yogurt. There was no going back & there was nothing else on my Dad's mind when he woke this afternoon. Tempted aren't you? Mouth Watering at the thought of attempting this fail-safe, easy bake? Read on to see how I made the Lemon Drizzle Flapjacks Gluten & Dairy Free.

Ingredients for Lemon Drizzle Flapjacks:
150g Vitalite Dairy Free Spread
150g Caster Sugar
350g Free From Porridge Oats
200g Lemon Curd
Zest of Two Lemons (make sure they're unwaxed)
Juice of 1/2 a lemon (flapjack mix) + another 1/2 for the drizzle
Large Splash of Maple Syrup
Icing Sugar (for the drizzle only)

How To Make Lemon Drizzle Flapjacks:
Firstly make sure you've pre-heated your oven to 170C (fan), have your 8-9 inch Square Tin lined with baking paper and pre-weigh out your ingredients to make this already super simple recipe even quicker. Now, melt together your 'Butter' and Sugar over a low heat, once melted remove from the heat and add in all your other ingredients. I recommend adding in the lemon curd, zest, juice and maple syrup before you add the oats - then stir until combined. Who loves how simple Flapjacks are? Spoon your zingy mixture into your prepared tin, press firmly down, ensuring it's level and equal before baking for a good 20-25 minutes. Mine took 23 minutes at 170C. You want the edges to be turning slightly golden, but no darker - unless you prefer a firmer Flapjack. We like our flapjack, golden but still soft and buttery - with the addition of the sticky lemon curd - my mouths watering at the thought of another slice right now. Now once out of the oven, leave in the tin to cool completely. All that's left to do is, the drizzle. Only make this once your flapjack is cool & out of the tin - I didn't bother measuring out the icing sugar and lemon juice. I sifted icing sugar into the juice of half a lemon until I got my desired thickness. Leave the icing to set - which won't take too long before slicing into your desired size pieces. They won't be around for long that's for sure - you'll be struggling to leave it at just the one slice.
